Chef Gerald is the founder and owner of The Fifth Taste, a locally owned food truck dedicated to bold Asian-fusion cuisine centered around umami—the “fifth taste.” With more than 15 years in the culinary industry, Gerald’s career has taken him around the world. He spent eight years as a Head Chef aboard international merchant vessels, cooking for multinational crews while traveling across continents. His culinary journey also includes working at the JW Marriott in Austin, Texas, and serving as an Executive Chef in Singapore. Inspired by his travels and experience cooking various global cuisines, Gerald created The Fifth Taste to share comforting, flavorful dishes that bring together the best flavors from around the world.
